Produced by Luis Alberto Chasoy, this honey processed coffee hails from the Pre-Colombian indigenous community, Aponte Village.

Luis Alberto Chasoy is the producer of this fantastic coffee, grown on the hills of the Aponte Village in western Colombia. Aponte is an indigenous reservation area that is geographically part of Colombia, but functions independently under its local elders. The people of Aponte are Inga, a pre-Colombian ethnic group related to the Incas.

Once the cherry skins and fruit were removed, Luis Alberto dried the cherries with the mucilage still intact, deeming this a honey processed coffee. Then once the mucilage was removed, the cherries were sold to Pergamino for further dry milling and export. Pergamino has been working with the families of Aponte for past 8 years helping to cultivate the next generation fo coffee growers through fair prices and technical assistance. The goal is for farmers and their families to see coffee cultivation as a profitable, decent business, and not just a way to survive. We’re very fortunate to be able to support them in this noble cause.

Unique, fruity, delicious

This coffee and El Balcon introduced me to fruity Colombian coffees, and I'm now a big fan and re-purchaser of both! I am a bit skeptical about the black cherry/white graph combination in this one, but it works so well. Try it!
