Tasting notes: Dark Chocolate and Plum Varietal: Bourbon, Caturra, Pache, Catuai Elevation: 1,700 - 1,980 masl Process: Washed
Las Palomas combines mellow chocolatey-ness with sweet, dark plum in a medium bodied cup. Dependable, lightly sweet, and even-keeled, this coffee is good on a foggy early morning or on a sleepy late afternoon.
Where is it from?
The crops of nine small producers in mountainous San Pedro Necta are pooled to create Las Palomas, a blend that reflects the varied elevations and late harvest season of the region. The lion's share of the farmland is dedicated to natural reserve, with only 280 hectares used for planting out of over 1700 hectares total. The coffee is handpicked and sorted, then processed in a local wet-mill that has adopted the processing methods of Bella Vista/Zelcafe, the group responsible for exporting the resulting coffee.
