We’re always on the lookout for different. Not different for the sake of being different, but different that pushes our perceptions of what coffee is or should be. This coffee is of the Parainema variety, a lesser known variety mostly found in Honduras, but one that is getting some attention due to it winning the Cup of Excellence in 2015. Not only is this a rare variety, it’s also naturally processed, making it even more unusual. This uniqueness produces a cup that’s fruity, funky, and complex. If you’re looking to push your perception of coffee, this one is for you.

Where it’s from

This coffee is brought to you by Leticia Lopez Hutchins, a 5th generation coffee farmer. She purchased a former cattle farm and turned it into a fifty-acre micro-lot coffee farm named Finca La Unica. The farm sits at about 1,400 meters above sea level, the perfect elevation for coffee, under the watchful eye of Mount Tenan in the Cartagua, Copan region of Honduras. Along with coffee, you’ll find cacao and lemon trees as well as wild berry bushes. Leticia is an example for women in Honduras by owning her own land and taking ownership of a role typically reserved for men.

With a very strong, pleasant strawberry aroma, this coffee has a strong rooibos tea flavor that ends with an acidic/fruity finish. Love this coffee!

One of my favorite things about methodical (that I unfortunately do not take advantage of as often as I would like) is the amount of natural process coffees that you guys offer. This Honduran was very delicate, while still boasting some very exciting flavors. As you all noted, strawberry was definitely the defining flavor of this coffee. I also tasted a slight note of soy on the back of my palate that added a little more to the profile as I drank the coffee. My only negative experience with this coffee (keep in mind I brewed on Chemex every day) was that I struggled to find a strong body for this coffee. Without the coffee becoming over concentrated, it was difficult to give this Honduran a full body that it definitely deserved. Would definitely drink again, and if I had the tools, I would love to cup this coffee! 4/5.
