Jaime has been a coffee producer for a long time. In fact he mentored Felipe Trujillo as a kid while he was La Ventolera's farm manager. Now Jaime has a small farm near La Ventolera, he’s dedicated full time in his production and enjoys it as an everyday task, it makes him feel alive and strong. Jaime, who never tires of learning, has produced an incredible naturally processed coffee by slowly selecting just the red ripe cherries and naturally fermenting them in open tanks with water adding each day a new batch and letting them absorb all the sweetness from its own juice for 90 hours. Then he spreads them in sunbed driers for 4 to 6 weeks until it reaches 11% moisture. The result? A sweet cup, and in our roasts we taste honeydew, florals, and tropical flavors. Jaime is a master and we're honored and humbled to offer you his coffee.

A Decent Light Brew!
Overall, this is a good coffee for a light morning beverage! Overall a bit flat and tended a bit toward bitterness, but the melon and floral notes came through on most pourovers.
I enjoyed a cup of this on drip at Methodical's cafe in The Commons. I don't typically associate Colombian coffees with strong fruit flavors, and "honeydew" as a tasting note never inspires. (It's a rather plain melon after all.) However, when I took my first sip, I was blown away. This is not a coffee of subtle fruitiness but a robust, pleasant tropical surprise. Highly recommended!
