25 years ago Heiner Lazo and his wife Johanna purchased Finca El Rubí—a coffee farm located in the Huila department of Colombia. The farm was initially growing mostly Caturra and Castillo varietals of coffee, but the Lazo family converted the plants to Papayo and SL28 varietals. Then 3 years, they added Pink Bourbon, a hybrid varietal created for flavor and resilience. Now, there are 7,300 Pink Bourbon coffee trees at El Rubí. Though this coffee is washed processed, the flavors that came through reminded us of grapefruit and peaches, and yes, we were even reminded of cola. Let us know what you think!
