The rare Chiroso varietal makes this Colombian coffee stand out with flavors of tropical fruit and aromas of freshly cut flowers.

The symphony of flavors and uniqueness behind this coffee make it truly one of a kind, because it actually is. In Agualinda, they have been working hard for the past 4 years to convert to the Chiroso variety and develop a few exclusive lots. Chiroso is a rather rare coffee varietal that is a direct descendant of Ethiopian varietals. The flavor profile is reminiscent of Ethiopian coffee, being floral and citrusy but it is matched by the body and complexity of the best Colombian coffees. Fun fact, this exclusive Chiroso lot from Finca Agualinda are the same plants that are planted at the 2020 Cup of Excellence winning farm, Finca Los Tres Mosqueteros.

We sourced this coffee through the exporter, Pergamino. Like many producers in Colombia, Pergamino spent many years helplessly riding the roller coaster of international coffee prices. They had to invest in their crops without knowing what they would sell for during their 12-year production cycle. They sold their coffee to large exporters, never knowing its unique sensory qualities, whose hands it ended up in, or at what price. They had no way to add value to the coffees, or receive a fair price for higher quality.

Everything changed when they started selling the coffee directly to roasters and importers around the world, gaining access to a fair and sustainable trade chain that recognized quality. Stepping off the roller coaster opened up the opportunity for them to help thousands of small coffee farmers do the same. Today Pergamino works with more than 600 producers of high-quality coffees in different regions of the country. Pergamino is committed to transparency in their partnerships with these farmers, ensuring that profit margins are clear and value added by quality goes directly to the producer.

FAQ

We roast to order and ship Monday-Thursday. Orders are usually fulfilled the production day after they are placed (for example, orders placed on Monday will ship on Tuesday). Orders placed Thursday-Sunday will be fulfilled and shipped on Monday.

By you? Yes. By us, sadly, no. Currently, we can only ship whole-bean coffee.

Freshness is critical to fully enjoying coffee. We roast to order to ensure your coffee is at peak freshness when it arrives. Sometimes our shipping partners experience delays due to weather, heightened demand, technical issues, pandemics, or aliens. All of which is out of our hands, except the aliens, but that's not for here.

If your package is delayed, let us know and we'll track it down and escalate its delivery. If it's delayed more than 2 weeks past the shipment date, and your order includes coffee, we'll either refund your money or ship you fresh coffee at no cost.
