Where is it from?
Palestina is a small town in Caldas, Colombia, a city in the Triangle of Coffee. Coffee grows free and easy thanks to young trees, warm days, and several sources of water for moist growing conditions as well as plentiful supply for processing. Our partners at Collaborative Coffee Source took a trip to Huila, Colombia, in 2018. While there, they sought out quality lots with Methodical in mind. This one is from Finca San Isidro, run by farmer Alirio Aguilera. It’s an approachable coffee that proves the pristine nature of it’s origin.
