A naturally processed Colombian coffee with bright fruit flavors and a clean finish.

These Tabi varietal cherries were harvested when 80% are fully ripe and 20% are slightly over ripe, then the cherries are put in a tank sealed off from any further oxygen for 12 hours before they were moved to a drying bed to dry slowly for 4 to 5 weeks.

Coffees from Tio Conejo are always a standout on the tasting table. The care and attention they take to produce coffee helps their coffees taste clean with no defects, while still having the characteristics of a fully natural, exotic tasting coffee. Not to mention the Tabi variety lends a subtly unique character to this natural processed coffee that you won’t find in the more common Caturra variety.

Tío Conejo translates “Uncle Rabbit” and is a beloved character from Colombia’s coffee growing region folklore symbolizing the traditional values, wit, and tenacity of its people. Started in 2010 and nestled between an elevation of 1,700 to 2,000 meters above sea level, Tío Conejo is not just a production farm, but home to both owners and employees and their families. Making this a true family-run operation where everyone strives to produce coffees with exceptional characteristics; all the while tirelessly dedicated to protecting, and preserving the fauna, flora, and architecture endemic to this region.

Tried this because I absolutely loved the Columbian Chami

Disappointed. The first couple batches of Columbian Chami were fantastic with lots of cherry and chocolate notes, almost like a black forest cake. Unfortunately the last batch of Chami and this batch of Tabi both seem over-roasted to me. There is a fair amount of char flavor along with a bit of chocolate but fruit notes are hardly noticeable.
