A coffee with rich flavors but a light body.
Edwin Rosas is a 44-year-old coffee producer from Chiriqui. He manages a farm that has been in his family for 66 years. He is passionately dedicated to continually improving harvest protocols and systems, always striving for the highest quality of the coffee. All of his coffee crops grow under the shade of avocado and tree tomatoes and he employs anywhere from three to 15 people, depending on the time of the season. He believes art and coffee to be the perfect combination, with art expressing the words that speech or text cannot.
What is Static Cherry?
For this process, the ambient environment is crucial. The coffee cherries are sealed in plastic tanks, with no oxygen present. By creating an anaerobic environment, certain bacteria and yeast is allowed to develop at a slower rate. This creates the freedom to experiment with different durations, in this case, an average of 24 to 72 hours. These relatively short fermentations lend a subtle vibrancy to the profile, due to the prevalence of lactic acids in the cherry.
