Sunset, formerly known as Colombia EA Decaf, is processed using the natural ethyl acetate (EA) method, which preserves the coffee’s integrity while removing caffeine. Ethyl acetate, derived from fermented sugarcane molasses, is commonly found in fruits and used in foods like candy and ice cream for its fruity flavor. In this process, green coffee is soaked in an EA solution that bonds with caffeine to extract it, then steamed to remove any residue resulting in a clean, flavorful decaf.

This particular coffee is grown in La Unión, Nariño, Colombia which is a diverse region in the southwestern corner of Colombia. Coffee production and farming in Nariño is predominantly done by smallholder producers and La Unión has become a key area to optimize transportation and accessibility to directly purchase parchment from producers around northern Nariño. The coffees used for this lot are all fully washed, picked during the day, and pulped in the afternoon on each of the individual farms before the decaf processing happens at Descafecol in Manizales, Colombia.

Pour 50 grams of water to start. After 30 seconds, pour to 200g. At 1:00 pour to 300g. At 1:30 pour to 400g. Finish at 5:35.

When will my order ship?

Freshness is critical to fully enjoying coffee. We roast to order to ensure your coffee is at peak freshness when it arrives. We roast to order and ship Monday-Thursday. Orders are usually fulfilled the production day after they are placed (for example, orders placed on Monday will ship on Tuesday). Orders placed Thursday-Sunday will be fulfilled and shipped on Monday.

Can my coffee be ground?

By you? Yes. By us, sadly, no. Currently, we can only ship whole-bean coffee.

What if my package is delayed?

Sometimes our shipping partners experience delays due to weather, heightened demand, technical issues, pandemics, or aliens. All of which is out of our hands, except the aliens, but that's not for here.

If your package is delayed, let us know and we'll track it down and escalate its delivery. If it's delayed more than 2 weeks past the shipment date, and your order includes coffee, we'll either refund your money or ship you fresh coffee at no cost.

Can this item be returned?

For all non coffee or tea items, a full refund can be requested if the items are unused within 30 days of delivery. To start a refund, email us at info@methodicalcoffee.com and we'll get your taken care of.
