Coffee Process

Honey & Washed

Elevation

1600-2000 masl

The washed lot is harvested and immediately de-pulped. The beans then float to remove unripe and low-density beans. After floating, the coffee is placed in tanks filled with water and left to ferment for three days. Once fermentation is done, the coffee dries until it reaches a moisture content of 10-11%.

The honey lot is hand-picked and sorted, leaving 95% fully ripe cherries that are fermented for 120 hours. It is then de-pulped and undergoes a second fermentation for 48 hours. The coffee is then sun dried until it reaches 12% moisture content.

Taught by her grandfather and father, she now dedicates herself full-time to coffee production alongside her sister, María. Through her work, Sara aims to highlight the dedication of coffee growers and the importance of agriculture in Colombia.

How to Brew

Grind

26 grams of coffee ground medium

Water

400 grams of 205*F water

Brew

Pour 50 grams of water to start. After 30 seconds, pour to 200g. At 1:00, pour to 300g. At 1:30, pour to 400g. Finish at 3:05.

Dose

18 grams of finely-ground coffee.

Yield

40 grams of espresso.

Pull shot for 31 seconds.

FAQ

Can this item be returned?

For safety, coffee and tea products cannot be returned. Gift cards are also considered final sale items and cannot be returned. Brew gear, apparel, or other non-perishable products, can be returned for a full refund as long as the items are unused and within 30 days of delivery. To start a refund, email us at info@methodicalcoffee.com and we'll get you taken care of.

What if my package is delayed?

Sometimes our shipping partners experience delays due to weather, heightened demand, technical issues, pandemics, or aliens. All of which is out of our hands, except the aliens, but that's not for here.

If your package is delayed, let us know and we'll track it down and escalate its delivery. If it's delayed more than 2 weeks past the shipment date, and your order includes coffee, we'll either refund your money or ship you fresh coffee at no cost.

Can my coffee be ground?

By you? Yes. By us, sadly, no. Currently, we can only ship whole-bean coffee.

When will my order ship?

Freshness is critical to fully enjoying coffee. We roast to order to ensure your coffee is at peak freshness when it arrives. We roast to order and ship Monday-Thursday. Orders are usually fulfilled the production day after they are placed (for example, orders placed on Monday will ship on Tuesday). Orders placed Thursday-Sunday will be fulfilled and shipped on Monday.
