After harvesting, the cherries are floated in water to select only the densest ones. The cherries are then hand-sorted to allow a ratio of 90% ripe and 10% overripe. They are placed in a tank allowing them to ferment and begin aerobic and acetic fermentation which imparts a fruit aroma and taste. After 12 hours, the cherries are sealed in hermetic tanks and a gas valve controls the anaerobic process. After 1 week, they are pulled from the tank and spread to dry on raised beds for 5-6 weeks until the moisture is below 11%.

If your package is delayed, let us know and we'll track it down and escalate its delivery. If it's delayed more than 2 weeks past the shipment date, and your order includes coffee, we'll either refund your money or ship you fresh coffee at no cost.

Can my coffee be ground?

Freshness is critical to fully enjoying coffee. We roast to order to ensure your coffee is at peak freshness when it arrives. We roast to order and ship Monday-Thursday. Orders are usually fulfilled the production day after they are placed (for example, orders placed on Monday will ship on Tuesday). Orders placed Thursday-Sunday will be fulfilled and shipped on Monday.
