We're so thankful to work with Walter Bautista again. This is the third time we've offered his coffee. Walter is a very busy farmer growing all kinds of things, not just coffee. But the coffee he grows is excellent, so we bought all of it. This is Walter's 2021 harvest—the culmination of a year of hard work and care. It's also wildly different in flavor than past years, a testament to the dramatic impact weather can have on the flavor of coffee. We hope you enjoy it.
Where is it from?
Walter Bautista is a fourth-generation coffee farmer. It wasn’t until a couple of years ago, in 2016, that Walter planted his own 2000 trees, though, beginning the career that has been handed down to him through the generations. His farm, Medalla Milagrosa, is located in Las Flores in the Santa Barbara region of Honduras, a rainy hillside area with rich mountain soil. The geography famously makes it difficult to execute one crucial aspect of coffee processing: drying. The rains, though, have created a special challenge to farmers and producers in the area, resulting in the investment in drying systems and the subsequent clear, fruity flavors that are unique to Santa Barbara coffees.

Surprise favorites are the best kind!
I received this in the Fellow drops subscription which I've been using to palate train, specifically to taste notes I would have never picked myself or have judged as dislikes or mid in the past. I would have never expected to enjoy apple notes in coffee and I'm glad to shatter my preconceived notions! Every sip is like a bite out of a fresh zingy, jammy blackberry apple tart. Its beans like this that has helped me gone from disliking fresh fruits and acidity linked notes, to suddenly want to go out and try pies and confections I never used to enjoy! I now seek out more vibrant fruity beans thanks to coffee like this ♥
Tastes like perfectly roasted coffee
As with all bags of Methodical coffee that I've tried, this coffee was roasted to perfection. The flavors are bright and fruity. Just the way I like it.
Normally I prefer coffee blends rather than single origin, but changed my mind after trying Walter. Absolutely delicious coffee and one of my favorites. When I opened the package, I was enticed by the heady aroma and brewed a pot right away. I was not disappointed, it is delicious! Very smooth, not complex but still absolutely wonderful and a new favorite. This is a very special coffee!
