This coffee undergoes a highly controlled, extended fermentation process designed to enhance flavor and preserve aromatic compounds. After being harvested at peak ripeness, the cherries ferment for 1,440 hours under vacuum conditions in stainless steel tanks. The negative pressure draws moisture from the cherries, creating two layers: an upper layer that retains its vivid color due to lack of oxidation, and a lower layer where cherries absorb flavor-rich leachate, intensifying their profile. This environment slows the degradation of polyphenols which are key to fruity, aromatic notes, while promoting yeast activity and cellular permeability. After fermentation, the cherries are separated and gently dried using a dehumidifier, preserving volatile compounds and resulting in a rich, stable cup.

Can this item be returned?

For all non coffee or tea items, a full refund can be requested if the items are unused within 30 days of delivery. To start a refund, email us at info@methodicalcoffee.com and we'll get your taken care of.

What if my package is delayed?

Sometimes our shipping partners experience delays due to weather, heightened demand, technical issues, pandemics, or aliens. All of which is out of our hands, except the aliens, but that's not for here.

If your package is delayed, let us know and we'll track it down and escalate its delivery. If it's delayed more than 2 weeks past the shipment date, and your order includes coffee, we'll either refund your money or ship you fresh coffee at no cost.

Can my coffee be ground?

By you? Yes. By us, sadly, no. Currently, we can only ship whole-bean coffee.

When will my order ship?

Freshness is critical to fully enjoying coffee. We roast to order to ensure your coffee is at peak freshness when it arrives. We roast to order and ship Monday-Thursday. Orders are usually fulfilled the production day after they are placed (for example, orders placed on Monday will ship on Tuesday). Orders placed Thursday-Sunday will be fulfilled and shipped on Monday.
