This year's release from Rivense del Chirripó is a blend of two Catuai lots—one natural processed and one honey processed. The natural lot undergoes a brief fermentation in open tanks before drying on raised beds for 8 days and then mechanically dried for 3-4 more days. The honey lot is de-pulped without water, pre-dried on raised beds for 4 days, then fermented in sealed plastic bags in a warehouse for 8-10 days before final drying. The Catuai variety, developed in Brazil, is a high-yielding, compact plant commonly grown in Central America.

Café Rivense del Chirripó is a family-run micromill founded in 2005 by Régulo Ureña and Isabel Rojas in southern Costa Rica’s Brunca region. Originally focused on cattle, Régulo transitioned to coffee farming to support his family, and now each part of the business is managed by one of his sons. Their La Guaca lot is named after nearby indigenous ceremonial sites, believed to be sacred and marked by natural monuments like large rocks.

Pour 50 grams of water to start. After 30 seconds, pour to 200g of water. At 1:00, pour to 300g. Pour all water at 1:30. Finish at 3:10.

Can this item be returned?

For all non coffee or tea items, a full refund can be requested if the items are unused within 30 days of delivery. To start a refund, email us at info@methodicalcoffee.com and we'll get your taken care of.

What if my package is delayed?

Sometimes our shipping partners experience delays due to weather, heightened demand, technical issues, pandemics, or aliens. All of which is out of our hands, except the aliens, but that's not for here.

If your package is delayed, let us know and we'll track it down and escalate its delivery. If it's delayed more than 2 weeks past the shipment date, and your order includes coffee, we'll either refund your money or ship you fresh coffee at no cost.

Can my coffee be ground?

By you? Yes. By us, sadly, no. Currently, we can only ship whole-bean coffee.

When will my order ship?

Freshness is critical to fully enjoying coffee. We roast to order to ensure your coffee is at peak freshness when it arrives. We roast to order and ship Monday-Thursday. Orders are usually fulfilled the production day after they are placed (for example, orders placed on Monday will ship on Tuesday). Orders placed Thursday-Sunday will be fulfilled and shipped on Monday.
