The Sidra variety is celebrated for its exceptional quality and unique origin story. This lot of Sidra Natural underwent meticulous cultivation and processing to preserve its distinct sensory profile. Post-harvest, cherries were carefully sorted, fermented with lab-cultured yeasts based on bean density and sweetness, and dried under tightly controlled conditions to preserve the coffee’s complex profile.

Fifteen years ago, Olinka Vélez became both a mother and the steward of Finca Chorora, where she has since cultivated specialty coffee with the same care, patience, and purpose she brings to motherhood. Located in Ecuador’s Loja Province, Finca Chorora was revived in 2010 with a vision for sustainable, export-ready specialty production rooted in environmental respect and dignified employment. Through strategic varietal trials and a focus on sensory differentiation, the farm quickly gained national acclaim and has since become a model of excellence replicated throughout the region. Situated at 1,300–1,650 masl and home to around 25,000 trees across five carefully selected varieties, Chorora continues to thrive at the intersection of innovation, sustainability, and maternal devotion.

Pour 50 grams of water to start. After 30 seconds, pour to 200g of water. At 1:00, pour to 300g. Pour all water at 1:30. Finish at 3:00.

Can this item be returned?

What if my package is delayed?

Sometimes our shipping partners experience delays due to weather, heightened demand, technical issues, pandemics, or aliens. All of which is out of our hands, except the aliens, but that's not for here.

If your package is delayed, let us know and we'll track it down and escalate its delivery. If it's delayed more than 2 weeks past the shipment date, and your order includes coffee, we'll either refund your money or ship you fresh coffee at no cost.

Can my coffee be ground?

By you? Yes. By us, sadly, no. Currently, we can only ship whole-bean coffee.

When will my order ship?

Freshness is critical to fully enjoying coffee. We roast to order to ensure your coffee is at peak freshness when it arrives. We roast to order and ship Monday-Thursday. Orders are usually fulfilled the production day after they are placed (for example, orders placed on Monday will ship on Tuesday). Orders placed Thursday-Sunday will be fulfilled and shipped on Monday.
