A complex but well-balanced coffee, from a hidden gem of an origin, that holds its own against other natural process coffees from the world’s most celebrated regions.

This is a natural process coffee, which means the coffee cherries are dried whole, rather than fermented or processed another way, to separate the beans from the cherry’s fruit. This is also the oldest method for processing coffee. Yet the ability to produce consistently high-quality dry naturals is difficult, requiring slow sun-drying (typically between 15-20 days in Myanmar depending on altitude), raised dry beds for better airflow, and frequent turning to ensure the cherries dry evenly.

Myanmar, also called Burma, is a tropical and mountainous country in Southeast Asia which has seen exponential growth in its green coffee bean production over the past decade. Naung Sam Phu is a remote mountainside village in Myanmar, part of the Indigo Mountain cooperative. It is known for its transition from poppy farming to specialty coffee production, starting in 2018. With support from programs like UNODC (United Nations Office on Drugs and Crime) and USAID, the village has become a model for sustainable development, producing high-quality dry natural coffee while supporting its local Pa-O community.

Pour 50 grams of water to start. After 30 seconds, add 150 grams of water. At 1:30, pour all water. Finish around 3:20.

We roast to order and ship Monday-Thursday. Orders are usually fulfilled the production day after they are placed (for example, orders placed on Monday will ship on Tuesday). Orders placed Thursday-Sunday will be fulfilled and shipped on Monday.

Freshness is critical to fully enjoying coffee. We roast to order to ensure your coffee is at peak freshness when it arrives. Sometimes our shipping partners experience delays due to weather, heightened demand, technical issues, pandemics, or aliens. All of which is out of our hands, except the aliens, but that's not for here.

If your package is delayed, let us know and we'll track it down and escalate its delivery. If it's delayed more than 2 weeks past the shipment date, and your order includes coffee, we'll either refund your money or ship you fresh coffee at no cost.
