Fidel Huancas harvests coffee in three rounds from July to October with help from his family. They work from 6 AM to 5 PM, picking ripe cherries. Each evening, he performs a “Rebalse” process, floating out underripe cherries before fermenting the rest in GrainPro bags for three days. After thorough washing, the coffee is dried on black cloths for 10–15 days, depending on the weather. Once dried, it’s delivered to the association’s warehouse for quality control.

Fidel Huancas Chinchay, 32, lives in La Unión, Cajamarca with his wife Merely and their daughter Xiomara. Both come from farming families and chose to continue that tradition. They manage two inherited coffee lots: Shipal, at 1800 masl, growing Catimor and Bourbon; and El Pajurillo, at 1900 masl, with Yellow Caturra and Red and Yellow Bourbon.

Pour 50 grams of water to start. After 30 seconds, pour to 200g. At 1:00, pour to 300g. At 1:30 pour all water. Finish at 3:20.

When will my order ship?

Freshness is critical to fully enjoying coffee. We roast to order to ensure your coffee is at peak freshness when it arrives. We roast to order and ship Monday-Thursday. Orders are usually fulfilled the production day after they are placed (for example, orders placed on Monday will ship on Tuesday). Orders placed Thursday-Sunday will be fulfilled and shipped on Monday.

Can my coffee be ground?

By you? Yes. By us, sadly, no. Currently, we can only ship whole-bean coffee.

What if my package is delayed?

Sometimes our shipping partners experience delays due to weather, heightened demand, technical issues, pandemics, or aliens. All of which is out of our hands, except the aliens, but that's not for here.

If your package is delayed, let us know and we'll track it down and escalate its delivery. If it's delayed more than 2 weeks past the shipment date, and your order includes coffee, we'll either refund your money or ship you fresh coffee at no cost.

Can this item be returned?

For all non coffee or tea items, a full refund can be requested if the items are unused within 30 days of delivery. To start a refund, email us at info@methodicalcoffee.com and we'll get your taken care of.
