This coffee is double anaerobic processed. It begins by sorting out unripe or low-density cherries, then cleaning the remaining cherries with ozone gas and UV light. The first fermentation immerses whole cherries in pH 6 water with a specific yeast for 24 hours. After depulping, the beans undergo a second fermentation in airtight bioreactors for 36 hours in pH 5 water. Once complete, the beans are washed and dried on raised beds.

Wilton became a producer after first being a chemical engineer and he has been able to use his past experiences to specialize in rare varieties and processing techniques, such as this CATW. Wilton grows and processes 18+ different varieties in Piendamo, Cauca. You could call Wilton a coffee designer—he is able to decide, through science, which processes and yeasts to pair with which varieties in order to bring out their flavor potential.

When will my order ship?

Freshness is critical to fully enjoying coffee. We roast to order to ensure your coffee is at peak freshness when it arrives. We roast to order and ship Monday-Thursday. Orders are usually fulfilled the production day after they are placed (for example, orders placed on Monday will ship on Tuesday). Orders placed Thursday-Sunday will be fulfilled and shipped on Monday.
What if my package is delayed?

Sometimes our shipping partners experience delays due to weather, heightened demand, technical issues, pandemics, or aliens. All of which is out of our hands, except the aliens, but that's not for here.

If your package is delayed, let us know and we'll track it down and escalate its delivery. If it's delayed more than 2 weeks past the shipment date, and your order includes coffee, we'll either refund your money or ship you fresh coffee at no cost.
Can my coffee be ground?

By you? Yes. By us, sadly, no. Currently, we can only ship whole-bean coffee.
