Pranoy’s process resembles sourdough fermentation: he develops a starter culture from parchment coffee and mucilage, using native yeasts and bacteria to inoculate future fermentations. First, freshly picked cherries are floated, then fermented overnight in their fruit. The next morning, they’re pulped and placed in water with the starter culture, stirred regularly for even fermentation. After 35–37 hours, the coffee is washed and dried—first under shade, then in a polyhouse.

Ajoy focuses on plant health and sustainable farming, while Pranoy, a biology graduate, leads post-harvest innovation that highlights the coffee’s natural genetics and native microbiome. Together, they balance sustainability, quality, and forward-thinking experimentation.

Can this item be returned?

For all non coffee or tea items, a full refund can be requested if the items are unused within 30 days of delivery. To start a refund, email us at info@methodicalcoffee.com and we'll get your taken care of.

What if my package is delayed?

Sometimes our shipping partners experience delays due to weather, heightened demand, technical issues, pandemics, or aliens. All of which is out of our hands, except the aliens, but that's not for here.

If your package is delayed, let us know and we'll track it down and escalate its delivery. If it's delayed more than 2 weeks past the shipment date, and your order includes coffee, we'll either refund your money or ship you fresh coffee at no cost.

Can my coffee be ground?

By you? Yes. By us, sadly, no. Currently, we can only ship whole-bean coffee.

When will my order ship?

Freshness is critical to fully enjoying coffee. We roast to order to ensure your coffee is at peak freshness when it arrives. We roast to order and ship Monday-Thursday. Orders are usually fulfilled the production day after they are placed (for example, orders placed on Monday will ship on Tuesday). Orders placed Thursday-Sunday will be fulfilled and shipped on Monday.
