Coffee Process

Process

Washed

Varietal

Catuai

Elevation

1340 masl

The Catuai varietal is de-pulped, washed, and fermented for 48–72 hours using a highly controlled fermentation process developed by Mr. Patre and his team. Through ongoing research and scientifically driven practices, each batch is carefully monitored using microbial analysis and acidity measurements, allowing fermentation to be guided with remarkable precision. Following fermentation, the coffee is then dried on raised beds, resulting in a clean, complex, and distinctive cup.

Ashok and Divya Patre at Ratnagiri Estate

Region

Chikmagalur, India

Founded in 1927 and family-owned for nearly a century, the Ratnagiri Estate is located in the foothills of Karnataka’s Western Ghats. The name “Ratnagiri,” meaning “Pearl Mountains,” reflects the estate’s canopy of silver oak trees. Today, third-generation producer Ashok Patre and his wife Divya continue the family’s legacy, combining agricultural knowledge with innovative processing methods to produce some of India’s cleanest specialty coffees. Through careful fermentation, advanced equipment, and a team that includes microbiologists, Ratnagiri maintains clarity, sweetness, and complexity in every cup.
